The traditional recipe of Delices and Gourmandises’ Dundee slab cake

All products offered by Delices and Gourmandises are using the finest ingredients that reveal their flavor and contribute to achieving a perfect bake. And so is the Dundee slab cake!

You will need:

Dundee cake– 120g raisins

– 100g glace cherries

– 60g mixed peel

– 170g unsalted butter

– 170g caster sugar

– 4 eggs

– 170g plain flour

– 1 teaspoon baking powder

– 1 teaspoon mixed spice

– 60g almond meal

– 80g whole blanched almonds

Preparation:

– Put the almonds into a small bowl and pour over boiling water to just cover. Leave for 5 mins then drain and leave to dry.

– Preheat the oven to 150°F/gas 5, and line the base and sides of a 20cm cake pan with baking paper.

– In a large bowl of electric mixer, beat the butter until soft. Add the sugar and beat until light.

– Sift in flour, baking powder and spice and mix gently.

– Add eggs to the creamed butter and sugar, one at a time, while beating, until well combined.

– Add the remaining flour and ground almonds. Then add the dried fruit and cherries and mix gently together.

– Pour into the pan and spread level using the back of a spoon.

– Bake in the oven for 45 mins.

– Remove and decorate top with the almonds, close together in neat circles

– Lower the oven temperature to 130°F/gas 2 and cook for a further hour. After 50 minutes, check every 10 minutes by inserting a wooden or metal skewer into the cake. you should have just a few crumbs attached, and a soft centre.

– Cool before removing from the pan.

  1. Never cooked a Dundee slab cake. I don’t like raisins, while it is part of the recipe. But I enjoy all the other delicacies of Délices et Gourmandises. It is always a pleasure to share them with family.

    I tried to prepare this traditional recipe of Délices &Gourmandises’ Dundee slab cake and it was very easy to prepare but as I’m not very good on cooking I totally messed it up. But I’ve already tasted it with my grandmother because she is a client of Délices & Gourmandises and it was so yummy. I really need to redo it!

    Why don’t you try another brand at Delices&Gourmandises! They have so many choices and they are all good! You know, my grandparents are one of their clients and they always order their pastries at Delices&Gourmandises! And I think that they had never been disappointed and as a first experience I was not disappointed too. Delices&Gourmandises also has many easy recipes. You can always try them.

    • As you suggested me Karmen I tried other Delices and Gourmandises’ products on my visit at my grandmother’s town! She asked me what I’d like to taste but Delices and Gourmandises offers so many choices on the website! She finally ordered cakes and chocolates! So yummy! She also knows some recipes of Delices and Gourmandises but I did not have the chance to taste them because i had to return home!

  6. Great!! Which of the ingredients produces the brown color on this cake ? It looks like it has cocoa in it even tho I don’t see any in the ingredients list.

  7. Hello all, I am in dire need of a recipe to help me prepare a peach color praline cake. Anyone has an idea? I have been looking through Delices and Gourmandises website catalogue but I have not found one yet. I am still searching though. Any help would be greatly appreciated.
