The cherry jam recipe by Delices and Gourmandises
For breakfast or tea time, the cherry jam is delicious. Delices and Gourmandises proposes an excellent cherry jam in its catalog. But if you would like to make your home-made cherry jam, we also offer you a very simple recipe.
What you need for making your cherry jam are:
– 1 kg pitted cherries
– 500gr of crystalized sugar
– A green lemon juice
– Half a vanilla bean or some vanilla extract
– 3 jelly leaves (facultative)
Delices and Gourmandises recommends you to choose fresh fruits and natural vanilla extract if you cannot find vanilla bean.
How to make the jam?
The day before the cooking, mix the sugar, the cherries and the vanilla (2 or 3 drops of extract if you do not have vanilla bean) and let macerate all night long in a cool place, but not in the fridge.
The next morning, put the mixture in a pan and let cook at low heat for about an hour. Whatever, you can remove it before or later depending on the texture you want. Take off the foam as it appears on the surface. Before removing the pan from the heat, add the citrus juice and the jelly leaves and mix gently.
Let the mixture cool and blend it in the mixer for having a soft texture. Put the jam into glass jars that you have first sterilized and dried well, and close them tightly. Put the jars upside down for several minutes to avoid air entry.
How to taste your cherry jam?
There are many ways to taste the cherry jam with bread or pancakes, toasts or breakfast rusks. Try the combination of jam and cheese as fromage frais (cottage cheese or quark cheese).
